Ingredients

Liquid Base

  • ½ cup chicken broth

Vegetables

  • 1 can artichoke hearts, drained (14 ounces)
  • 4 cloves garlic, pressed
  • 1 box frozen spinach (10 ounces)

Dairy and Creamy Components

  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 package cream cheese (8 ounces)
  • 1 cup grated parmesan cheese
  • 2 cups shredded mozzarella cheese

Seasonings

  • ½ teaspoon kosher salt
  • 1 teaspoon onion powder

Instructions

  1. Add Ingredients to Instant Pot: Pour ½ cup of chicken broth into the bottom of the Instant Pot. Then layer the drained artichoke hearts, pressed garlic cloves, and frozen spinach on top, making sure not to stir.
  2. Add Creamy Ingredients and Spices: Next, add the sour cream, cream cheese, mayonnaise, kosher salt, and onion powder on top of the vegetables without mixing. This layering ensures even cooking and flavor infusion.
  3. Seal and Cook: Lock the Instant Pot lid in place, ensuring the valve is set to SEALING. Select the HIGH PRESSURE (manual) setting and cook for 4 minutes.
  4. Quick Release Pressure: When the cooking time ends, carefully perform a quick pressure release by turning the valve on top to the VENTING position.
  5. Add Cheeses and Stir: Open the lid and immediately add the grated parmesan and shredded mozzarella cheese to the pot. Stir the mixture thoroughly until the dip is smooth and creamy.
  6. Serve and Enjoy: Transfer the dip to a serving dish and serve warm with pita chips, bagel chips, pretzels, or your favorite dippers. Enjoy this crowd-pleasing appetizer!
