Ingredients

Dip Ingredients

  • 8 ounces cream cheese (softened)
  • ½ cup mayonnaise
  • ½ cup chive and onion sour cream chip dip
  • 1 cup dill pickles (chopped)
  • 2 tablespoons pickle juice
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon fresh chives (chopped)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup white cheddar cheese (shredded, reserve ½ cup for topping)
  • ½ cup mozzarella cheese (shredded)

For Garnish and Serving

  • More chopped pickles, dill, and chives (for garnish)
  • Toasted baguette, potato chips, and/or crackers (for serving)

Breadcrumb Topping

  • 1 tablespoon butter
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the dip.
  2. Mix the base: In a large bowl, combine the softened cream cheese, mayonnaise, and chive and onion sour cream chip dip. Use a handheld mixer to beat these together until the mixture is completely smooth.
  3. Add remaining ingredients: Stir in the chopped dill pickles, pickle juice, fresh dill, fresh chives, garlic powder, onion powder, shredded white cheddar cheese (except for the reserved ½ cup), and shredded mozzarella cheese. Mix well using a rubber spatula until all ingredients are evenly combined.
  4. Transfer and top: Pour the dip mixture into an 8×8 inch baking dish. Evenly sprinkle the reserved ½ cup of white cheddar cheese over the top of the dip.
  5. Bake the dip: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the dip is hot and bubbly. Optionally, broil the top for 1-2 minutes to achieve a golden-brown cheese crust.
  6. Toast the breadcrumbs: While the dip bakes, melt the butter in a small skillet over medium heat. Add the panko breadcrumbs and fry, stirring occasionally, until they turn golden brown, approximately 5 minutes. Remove from heat.
  7. Garnish and serve: Once the dip is done baking, remove it from the oven and sprinkle the toasted breadcrumbs on top along with additional chopped pickles, dill, and chives for extra flavor and texture. Serve warm with toasted baguette slices, potato chips, or crackers for dipping.

Notes

  • For spicier flavor, add a pinch of cayenne pepper or chopped jalapeños to the dip mixture.
  • Make sure cream cheese is softened to room temperature for easier mixing.
  • Use fresh herbs for the best flavor; dried dill or chives can be substituted but use less to avoid overpowering the dip.
  • To save time, breadcrumbs can be toasted ahead and stored for a few days in an airtight container.
  • This dip is best served immediately but can be reheated in the oven to restore warmth and gooey texture.
