Ingredients

Chicken

  • 2 boneless skinless chicken breasts
  • 1 teaspoon salt (divided)
  • 1/2 teaspoon pepper (divided)
  • 1 tablespoon garlic herb seasoning (divided)
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano

Sauce and Vegetables

  • 1/3 cup balsamic vinegar
  • 3 tablespoons honey
  • 5 cloves garlic, minced
  • 1 lb mushrooms, sliced
  • 1 large onion, diced
  • 3 tablespoons olive oil (divided)

Instructions

  1. Cook the onions and mushrooms: In a large nonstick pan, heat 1 tablespoon of olive oil over high heat. Add the diced onions and cook for about 2 minutes. Then add the sliced mushrooms and cook an additional 2 minutes. Lower heat to medium-high, add the minced garlic, and cook for one minute. Season the mixture with 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon garlic herb seasoning. Remove the mixture from the pan and set aside.
  2. Season chicken breasts: Cut each chicken breast in half horizontally to create 4 thinner pieces. Season both sides of each piece evenly with 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon Italian seasoning.
  3. Sear the chicken and make sauce: In the same pan, heat 2 tablespoons olive oil over high heat. Place the seasoned chicken pieces in the pan and cook undisturbed for 1 minute on each side to form a golden crust. Add back the cooked mushrooms and onions along with the balsamic vinegar, honey, remaining Italian seasoning, dried oregano, and any remaining salt, pepper, and garlic herb seasoning. Continue cooking the chicken and sauce for 2 to 5 minutes, depending on thickness, until the internal temperature of the chicken reaches 165°F. Do not remove the chicken from the pan before it is fully cooked. Simmer the sauce until it thickens slightly to your liking. Once done, remove everything from the pan and serve immediately.
