Ingredients

Dry Ingredients

  • 1 1/4 cup flour (all-purpose or whole wheat)
  • 1 teaspoon baking powder

Wet Ingredients

  • 1 cup cottage cheese (full fat is best)
  • 3 large eggs
  • 1 teaspoon vanilla flavoring
  • 1 Tablespoon maple syrup (plus more for serving)
  • 3 Tablespoons milk of choice (or up to 1/4 cup for thinner pancakes)
  • 3 Tablespoons coconut oil (melted and cooled)

Instructions

  1. Combine Dry Ingredients: In a large bowl, whisk together the flour and baking powder until thoroughly mixed.
  2. Blend Liquid Ingredients: In a blender, add the cottage cheese, eggs, vanilla flavoring, maple syrup, and milk. Blend until the mixture is completely smooth and creamy.
  3. Pour Into Dry Ingredients: Pour the blended wet ingredients into the bowl with the dry ingredients. Stir gently to combine without overmixing.
  4. Stir in Coconut Oil: Add the melted and cooled coconut oil to the batter and stir until well combined. The batter will be thick at this stage.
  5. Heat Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions to ensure even cooking.
  6. Scoop Batter Into Waffle Iron: Spoon approximately 1/3 cup of batter into each cavity of the waffle iron, spreading if necessary for even coverage.
  7. Cook Waffles: Close the waffle iron and cook the waffles for 3 to 6 minutes, depending on your appliance, until they are golden brown and cooked through.
  8. Enjoy: Carefully remove the waffles and serve hot. Top with additional maple syrup or your favorite toppings and enjoy your homemade waffles!

Notes

  • Use full-fat cottage cheese for the best texture and flavor.
  • If the batter is too thick, add a little extra milk to reach the desired consistency.
  • Cooking times may vary depending on your waffle iron; adjust accordingly.
  • Try serving with fresh fruits, nuts, or whipped cream for added indulgence.
  • For a gluten-free version, substitute the flour with a gluten-free flour blend.
