  • ½ cup whole wheat flour (60g)
  • 2½ cups all-purpose flour (300g)
  • 1 tsp salt (5g)

Instructions

  1. Gather and prep: Gather and measure all ingredients needed for the recipe to ensure a smooth cooking process.
  2. Activate the yeast: In a small bowl, combine the warm water, sugar, and yeast. Stir gently to dissolve the yeast and let it rest for 5 minutes or until a foam forms on top, indicating the yeast is active. Once foamy, add the olive oil and mix.
  3. Make a dough: In a large bowl, combine 1 cup of the flour (including the whole wheat flour) with the salt. Stir to mix evenly. Pour in the activated yeast mixture and stir to combine, starting to form a dough.

Transfer the dough to a floured surface and knead it thoroughly for at least 3 minutes, adding flour as needed until the dough is soft, pliable, and not sticky—approximately 3 cups of flour used in total.
  5. Rise the dough: Place the dough ball into a lightly oiled bowl and cover it loosely with a cloth or plastic wrap. Allow the dough to rise in a warm area for about 1 hour or until it has doubled in size.
  6. Portion the dough: Punch down the risen dough to release air, then transfer it to a floured surface. Stretch the dough into a log shape and cut it into 8 equal portions. Shape each portion into a smooth ball, then roll each ball into a flat circle approximately 6 inches in diameter.
  7. Preheat the oven and rest dough: Preheat your oven to 500°F (260°C). While the oven heats, cover the rolled-out dough circles with a damp cloth to prevent them from drying out.
