This Homemade Fresh Mint Ice Cream is a creamy, refreshing treat made with full-fat coconut milk, fresh mint leaves, and sweetened naturally with maple syrup. Enhanced with a touch of vanilla bean paste and crunchy cacao nibs, this vibrant green ice cream offers a deliciously dairy-free alternative perfect for summer days or anytime you crave a cool dessert.

Ingredients

Main Ingredients

  • 2 cans full-fat coconut milk
  • 1/3 cup maple syrup
  • 1 packed cup fresh mint leaves
  • Handful of spinach
  • 1 tsp vanilla bean paste
  • Pinch of salt
  • 1/4 cup cacao nibs

Instructions

  1. Blend Ingredients: Combine the coconut milk, maple syrup, fresh mint leaves, spinach, vanilla bean paste, and salt into a blender. Blend on medium-high speed until the mixture is smooth and all ingredients are fully incorporated.
  2. Freeze Using Freeze-and-Stir Method: Pour the blended ice cream base into a loaf pan and place it in the freezer. Every 30 minutes, remove the pan and stir thoroughly to break up ice crystals. Continue this process until the ice cream is halfway frozen.
  3. Add Cacao Nibs: Once the ice cream base is half-frozen, fold in the cacao nibs evenly. Return the pan to the freezer and allow it to freeze completely before serving.
  4. Alternate Electric Ice Cream Maker Method: Pour the ice cream mixture into the frozen drum of an electric ice cream maker. Turn on the machine and churn for about 20 minutes until the ice cream is soft but frozen. Scoop the ice cream into a stainless steel bowl and fold in the cacao nibs gently. You can then return the ice cream to the mixer for further freezing or transfer it to a loaf pan to firm up in the freezer.
  5. Serve: Once fully frozen, scoop the ice cream into bowls and enjoy the fresh, minty flavor with a satisfying crunch from the cacao nibs.

Notes

  • For a more vivid green color, use fresh mint leaves and a small amount of spinach for added vibrancy without overpowering the flavor.
  • The freeze-and-stir method requires patience but produces a creamy texture without an ice cream maker.
  • If using an electric ice cream maker, ensure the drum is fully frozen before starting.
  • Cacao nibs add a crunchy texture and subtle chocolate flavor—feel free to adjust the amount to your preference.
  • This recipe is dairy-free and vegan-friendly due to the use of coconut milk.
