Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • ¼ teaspoon garlic powder

Cheese and Butter

  • 1½ cups shredded cheddar cheese (white cheddar, Colby, or gouda are great alternatives)
  • 6 tablespoons cold unsalted butter (chopped into pieces)

  • 2 tablespoons ice water
  • Cooking spray
  • 1 tablespoon Everything Bagel Seasoning

Instructions

  1. Prepare the dough: Blend the shredded cheddar cheese, flour, salt, dried basil, oregano, thyme, and garlic powder in a food processor for about 30 seconds until well combined. Add the cold chopped butter and pulse until the mixture resembles coarse crumbs, about 20 seconds. Add the ice water and pulse 10 to 12 times until the dough forms large clumps.
  2. Chill the dough: Transfer the dough onto a lightly floured surface. Divide it in half and shape each portion into a square with your hands. Wrap each dough square tightly in plastic wrap and refrigerate for 45 minutes to 1 hour, or up to 2 days.
  3. Preheat the oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  4. Roll and cut the dough: Unwrap the chilled dough and place it on a floured surface. Roll each square out to about 9 inches. Using a pizza cutter or sharp knife, slice each square into 6 to 8 strips about 1 to 1.5 inches wide. Then cut perpendicular strips to form individual crackers.
  5. Prepare for baking: Arrange the square-shaped crackers on the prepared baking sheets. Lightly spray the crackers with cooking spray and sprinkle evenly with Everything Bagel Seasoning or your preferred topping.
  6. Bake the crackers: Bake in the preheated oven for 17 to 18 minutes until the edges turn golden brown. Rotate the baking sheets halfway through for even baking. For a crunchier texture, you can bake up to 20 minutes.
  7. Cool the crackers: Remove the crackers from the oven and allow them to cool completely on the baking sheets to crisp up further.
  8. Store properly: Once cooled, store the cheese crackers in an airtight container at room temperature. They will stay fresh and crunchy for up to 7 days.
