  • 1 cup dried red lentils
  • 1/4 cup tahini
  • 3 tablespoons lemon juice (about 1 small lemon)
  • 2 tablespoons olive oil (or water for a lighter version)
  • 1 clove garlic
  • 1/4 tsp ground ginger
  • 1/2 tsp ground cumin
  • 1/4 tsp turmeric
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper
  • Salt & black pepper to taste

Instructions

  1. Wash and cook the lentils: Rinse the red lentils thoroughly under cold running water until the water runs clear to remove any dust or debris. Place the rinsed lentils in a medium saucepan and cover with water by about 2 inches. Bring the water to a boil over medium-high heat, then reduce the heat to low, cover the pot, and let the lentils simmer gently for about 15 minutes, or until they are tender but not mushy. Drain any remaining water using a sieve and let the lentils cool slightly.
  2. Blend ingredients: Transfer the cooked lentils to a food processor. Add tahini, fresh lemon juice, olive oil, garlic clove, ground ginger, ground cumin, turmeric, onion powder, and cayenne pepper. Pulse the mixture until smooth and creamy, scraping down the sides as needed. If the dip is too thick, gradually add water until you reach your preferred consistency. Finally, season with salt and black pepper to taste, blending once more to combine evenly.

Notes

  • Use red lentils for the best texture and flavor; brown or green lentils can also be used but may require different cooking times.
  • Adjust the cayenne pepper to control the heat level of the dip.
  • This dip can be stored in an airtight container in the refrigerator for up to 4 days.
