Ingredients

For Whipped Cottage Cheese:

  • 1 (16 ounce) container low-fat cottage cheese (Good Culture recommended)
  • 1 garlic clove, sliced or roughly chopped
  • 1 small lemon, zested
  • ¾ cup Chicago-Style mild or hot giardiniera, drained but not rinsed

For Topping:

  • Extra ¼ cup giardiniera with oil (do not drain the oil)
  • Optional: Fresh grated parmesan cheese
  • Chopped fresh parsley or green onion

Instructions

  1. Combine Ingredients in Blender: In the bowl of a food processor or high-powered blender, add the cottage cheese, garlic clove, and lemon zest. Blend on high speed for 30 seconds to 1 minute, using a blender tamper or spatula to scrape down the sides as needed to ensure a smooth and creamy consistency.
  2. Add Giardiniera: Add the drained giardiniera (do not rinse it) to the blended cottage cheese mixture. Blend again on high for an additional 30 seconds to incorporate the flavorful pickled vegetables evenly throughout the dip.
  3. Transfer and Top: Spoon the whipped cottage cheese giardiniera dip into a shallow serving bowl. Top with an additional ¼ cup of giardiniera, keeping the oil to add richness and flavor. Sprinkle with chopped fresh parsley or green onions and, if desired, add a light dusting of freshly grated parmesan cheese for a savory finish.
  4. Serve: Serve the dip chilled or at room temperature.
