These Healthy Walnut Date Bars are a no-bake, nutrient-dense treat that combines the natural sweetness of Medjool dates with crunchy walnuts and a smooth almond butter chocolate topping. Perfect for a quick, wholesome snack or dessert, they require minimal ingredients and only 20 minutes of prep time.

Ingredients

Crust

  • 1/2 cup coconut flour (60g)
  • 1/2 cup walnut halves (55g)
  • 1/8 tsp salt
  • 3 Tbsp coconut oil, room temp
  • 1 Tbsp raw honey (or maple syrup for vegan)
  • 1 tsp vanilla bean paste

Filling

  • 125g Medjool dates, pitted (8-10 dates)
  • 1 cup walnut halves (110g)
  • 1/2 cup unsweetened shredded coconut (50g)
  • Pinch of salt

Topping

  • 2 oz dark chocolate
  • 1/3 cup drippy almond butter

Instructions

  1. Prepare baking dish: Line an 8×8 inch baking dish with parchment paper or foil and set aside, ensuring easy removal of the bars later.
  2. Make the crust: Place all crust ingredients into a food processor. Blend, stopping to scrape down the sides as needed, until the mixture clumps together into a dough.
  3. Press crust: Remove crust mixture from the food processor and firmly press it into the lined baking dish to form an even base layer.
  4. Prepare filling: Add all filling ingredients to the food processor and blend until the mixture starts to clump, forming a sticky consistency.
  5. Apply filling: Take the filling mixture out, scatter it evenly over the crust, and press it down firmly with your hands to pack it tightly.
  6. Melt topping: Place the dark chocolate in a small saucepan and melt it on low heat on the stovetop. Once fully melted, remove from heat and stir in the drippy almond butter until smooth and combined.
  7. Spread topping: Pour the chocolate and almond butter mixture over the filling layer and use a spatula to spread it evenly, ensuring it touches all edges of the pan.
  8. Chill bars: Place the baking dish in the refrigerator for at least 30 minutes to allow the bars to set and the topping to firm.
  9. Cut and serve: Once chilled, lift the bars out using the parchment paper, cut into desired sizes, and enjoy this healthy and delicious snack.

Notes

  • For a vegan option, substitute raw honey with maple syrup.
  • Ensure dates are pitted to avoid any surprises while eating.
  • Use good quality dark chocolate with at least 70% cocoa for rich flavor and health benefits.
  • Store bars in an airtight container in the fridge for up to 5 days.
  • For a firmer texture, chill the bars longer or briefly place in the freezer before serving.
  • If almond butter is too thick, warm slightly to achieve a drippy consistency for the topping.
