Ingredients

Berry Layer

  • 4 cups frozen mixed berries (600g), not thawed (can use fresh)
  • 2 tablespoons maple syrup (more or less to taste)
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla bean paste
  • 1 tablespoon cornstarch or arrowroot
  • ½ teaspoon ground cinnamon
  • 1/8 teaspoon salt

Crumble Layer

  • 1 cup rolled oats (90g)
  • ⅓ cup nut or seed butter (80g), almond butter recommended
  • 3 tablespoons maple syrup
  • ½ teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 tablespoons chopped nuts (half cashews, half pecans suggested)
  • 1 tablespoon chia or flax seeds
  • 1 tablespoon hemp seeds or coconut shreds
  • 1 teaspoon lemon zest

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish to prevent sticking.
  2. Make the Berry Layer: In a large bowl, combine the frozen mixed berries, maple syrup, lemon juice, and vanilla bean paste. Stir until well mixed. Add cornstarch, cinnamon, and salt; mix thoroughly to coat the berries and help thicken the filling during baking.
  3. Prepare the Crumble Topping: Place the rolled oats, nut or seed butter, maple syrup, cinnamon, and salt into a food processor. Pulse 6–10 short times until the mixture forms coarse crumbs with some larger pieces and soft clumps when squeezed. If too dry, add an additional tablespoon of maple syrup or nut butter and pulse a couple more times.
  4. Assemble the Crumble: Transfer the berry mixture into the prepared baking dish, spreading it evenly. Sprinkle the crumble topping uniformly over the berries without pressing it down, ensuring a light and crumbly texture.
  5. Bake the Crumble: Place the dish in the oven and bake for 35–40 minutes until the berries are bubbling through and the topping has turned lightly golden brown.
  6. Rest Before Serving: Remove from the oven and allow the crumble to rest for 10 minutes to let the filling thicken and flavors meld before serving.
