  • 1/3 cup maple syrup or honey
  • 2 cups corn flakes

Chocolate Coating

  • 1 cup chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Crush the corn flakes: Add the corn flakes to a large zip-top bag, seal it securely, and crush the cereal into small pieces using your hands or a rolling pin until fine but still slightly chunky.
  2. Mix the base: In a large bowl, combine the peanut butter and maple syrup or honey. Stir well until fully blended. Then, fold the crushed corn flakes into the mixture until all pieces are evenly coated and incorporated.
  3. Press into pan: Line a loaf pan with parchment paper for easy removal. Transfer the peanut butter and cereal mixture into the pan and press it down firmly and evenly to create a compact, uniform layer. Place the pan into the freezer for at least 1 hour to harden.
  4. Cut into bars: Remove the hardened mixture from the freezer. Gently lift it out of the pan using the parchment paper and set it on a cutting board. Using a sharp knife, cut the slab into 12 evenly sized bars.
  5. Prepare the chocolate coating: Melt the chocolate chips and coconut oil together in a microwave or double boiler, stirring frequently to achieve a smooth consistency. Dip each bar into the melted chocolate thoroughly to coat it all around. Place coated bars on a parchment-lined plate.
  6. Harden chocolate and serve: Put the chocolate-coated bars back into the freezer for about 10 minutes until the chocolate hardens. Enjoy them immediately or store in an airtight container in the freezer for up to 3 months.
