These Healthy Egg Bites are a delicious and nutritious breakfast option, combining fluffy eggs blended with cottage cheese and seasoned with spices. Ingredients

Egg Mixture

  • 8 large eggs
  • 1 cup cottage cheese
  • ½ tsp sea salt
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ⅛ tsp black pepper

Fillings

  • 2 large handfuls baby spinach, chopped
  • ½ cup crumbled feta cheese (or shredded cheese of your choice)

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Generously grease a nonstick muffin tin with cooking spray or oil to ensure the egg bites do not stick. You can also use parchment paper muffin liners or a silicone muffin tin for easier removal.
  2. Blend Egg Mixture: In a blender, combine the cracked eggs, cottage cheese, sea salt, onion powder, garlic powder, and black pepper. Blend or pulse several times until you achieve a smooth mixture with a consistent texture.
  3. Fill Muffin Cups: Place the chopped baby spinach and crumbled feta cheese into each muffin cup. Then carefully pour the blended egg mixture into each slot until it is about ¾ full, as the mixture will rise during baking.
  4. Bake Egg Bites: Bake in the preheated oven for 25 minutes or until the edges around the muffins turn golden brown and the centers are firm to the touch. The egg bites will puff up while baking but will deflate slightly as they cool.
  5. Cool and Serve: Remove the muffin tin from the oven and let the egg bites cool for a few minutes. Once cooled, carefully remove them from the tin and serve warm or store for later enjoyment.
