Instructions

  1. Preheat and Prepare Muffin Tin: Preheat oven to 325 degrees F. Lightly coat a standard 12 cup muffin tin with nonstick spray or line with paper liners to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the white whole wheat flour, unsweetened cocoa powder, baking soda, instant espresso powder if using, kosher salt, and ground cinnamon until well combined. Stir in the semi-sweet chocolate chips.
  3. Combine Wet Ingredients: In a medium bowl, briskly whisk the eggs, plain Greek yogurt, honey, almond milk, canola oil, and vanilla flavoring together until smooth.
  4. Combine Wet and Dry Ingredients: Make a well in the center of the dry ingredients and pour in the wet ingredients. Gently fold by hand just until the dry ingredients disappear and the batter is combined, taking care not to overmix.
