Ingredients

Caramelized Onions

  • 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar

Dip Mixture

  • 3/4 cup cottage cheese
  • 1/4 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1/2 teaspoon balsamic vinegar
  • 1/2 teaspoon vegetarian Worcestershire sauce
  • 1/2 teaspoon garlic powder

Instructions

  1. Caramelize the Onions: Heat 1 tablespoon of butter in a large skillet over medium heat until melted and swirling to coat the pan evenly.
  2. Add Onions and Season: Add the thinly sliced onions to the skillet and stir to coat well with the butter. Sprinkle 1/2 teaspoon salt and 1/2 teaspoon sugar evenly over the onions and stir to combine.
  3. Cook the Onions: Maintain medium heat and cook the onions for 20 minutes, stirring occasionally. Monitor the pan to ensure it doesn’t dry out; add a splash of water if the onions start sticking.
  4. Finish Caramelizing: Reduce the heat to medium-low and continue cooking for another 10-15 minutes until the onions turn a deep brown color.
  5. Cool and Chop: Remove from heat and allow the onions to cool slightly. Transfer them to a cutting board and finely chop. The onions can be made a day in advance and stored until ready to use.
  6. Blend the Base: In a blender, food processor, or using an immersion blender, puree 3/4 cup cottage cheese until smooth.
  7. Add Remaining Ingredients: To the puréed cottage cheese, add 1/4 cup plain Greek yogurt, 1/3 cup mayonnaise, 1/2 teaspoon balsamic vinegar, 1/2 teaspoon vegetarian Worcestershire sauce, and 1/2 teaspoon garlic powder. Blend until mixture is uniform and smooth.
  8. Incorporate Onions: Stir in the finely chopped caramelized onions until evenly combined with the creamy base.
  9. Chill the Dip: Cover the bowl and refrigerate for about 30 minutes to allow flavors to meld. The dip can be prepared up to two days ahead for convenience.
