  • 1/2 tsp garlic powder
  • 1/4 tsp sea salt (for sweet potatoes)
  • 1 tbsp olive oil (for sweet potatoes)
  • Salt and pepper to season mushrooms
  • Olive oil (small amount for sautéing mushrooms)

Burger Sauce

  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp ketchup
  • 1 clove garlic (crushed)
  • 3 tbsp pickle (finely diced, or use relish)
  • 1 tsp pickle juice

Instructions

  1. Spiced Sweet Potatoes: Preheat your oven to 400°F (200°C). Peel and cut the sweet potatoes into thick rounds. Toss them in a bowl with olive oil, smoked paprika, garlic powder, and sea salt, making sure each piece is evenly coated. Spread the sweet potato rounds on a sheet pan with room between each slice to allow them to caramelize rather than steam. Roast in the oven for about 20 minutes, flipping halfway through the cooking time until tender and golden.
  2. Cook Burger Meat: Heat a large skillet over medium heat and add the ground beef. Season with sea salt and black pepper. Cook the meat, breaking it apart and stirring occasionally, until it is well browned and cooked through. Remove the beef from the pan using a slotted spoon and set aside, leaving behind any grease.
  3. Sauté Mushrooms: Wipe the skillet clean, add a small amount of olive oil, then add the cremini mushrooms. Cook over medium heat until the mushrooms are nicely browned and have released their moisture. Season with salt and pepper to taste, then remove from the heat.
  4. Prepare Burger Sauce: In a small bowl, combine the crushed garlic, mayonnaise, Dijon mustard, ketchup, pickle juice, and finely diced pickles or relish. Stir thoroughly until the sauce is smooth and well combined. Set aside.
  5. Assemble Burger Bowls: Create a burger bowl assembly station with shredded romaine or butter lettuce as the base. Arrange cooked ground beef, sautéed mushrooms, roasted sweet potatoes, sliced tomato, avocado, sliced red onion, and pickles on the side for easy serving.
