These Healthy Baked Tuna Cakes are an easy, nutritious meal option made by baking and broiling tuna patties seasoned with lemon, garlic, parsley, and Old Bay seasoning. Perfectly crispy on the outside and tender inside, they are great served with lemon wedges and a dollop of healthy tartar sauce.

Ingredients

Main Ingredients

  • 1 large egg
  • 3 Tablespoons light mayonnaise
  • 2 Tablespoons lemon juice
  • 2 Tablespoons chopped fresh parsley
  • 2 – 3 teaspoons Old Bay seasoning
  • 3 cloves garlic, minced
  • 4 5-ounce cans tuna (total drained weight 16 ounces)
  • 5 Tablespoons breadcrumbs, panko or regular
  • 3 Tablespoons grated Parmesan (or Pecorino Romano)
  • 2 Tablespoons diced onion

For Serving

  • Lemon wedges
  • Healthy tartar sauce

Instructions

  1. Preheat Oven: Situate one oven rack in the middle and one near the top of your oven. Preheat the oven to 400°F (204°C). Lightly grease a baking sheet and set aside.
  2. Mix Ingredients: In a mixing bowl, whisk together light mayonnaise, egg, lemon juice, chopped fresh parsley, Old Bay seasoning, and minced garlic until well combined. Add drained tuna, breadcrumbs, grated Parmesan, and diced onion. Stir all ingredients evenly to form the tuna mixture.
  3. Form Tuna Cakes: Using a one-quarter cup measuring cup, scoop the mixture and press it firmly into the cup to pack densely. Invert the measuring cup over the prepared baking sheet and tap until the tuna cake releases. Press any separated pieces back into place. Repeat until all mixture is formed into cakes (about 10 cakes).
  4. Bake Tuna Cakes: Place the baking sheet on the middle rack and bake for 10 minutes at 400°F to cook through.
  5. Broil for Crispiness: Transfer the baking sheet to the top rack, switch the oven to broil, and broil the tuna cakes for 1-2 minutes or until the tops are golden brown and slightly crisp. Watch closely to prevent burning.
  6. Serve Warm: Remove from oven and serve the baked tuna cakes warm with lemon wedges and a side of healthy tartar sauce for added flavor.

Notes

  • Tuna: Use water-packed tuna over oil-packed to reduce sodium content.
  • Mayonnaise: Regular mayonnaise or plain Greek yogurt can substitute light mayonnaise.
  • Old Bay Seasoning: Adjust between 2 to 3 teaspoons depending on your taste and the sodium level of your ingredients.
  • Breadcrumbs: Both panko and regular plain breadcrumbs work; avoid seasoned breadcrumbs to keep sodium low.
  • Shaping Tip: Use measuring cups to form uniformly sized cakes or flatten them to create patties; thinner patties may require less cook time.
  • Prevent Sticking: Spray measuring cup lightly with cooking spray to help the tuna mixture release more easily.
