A quick and delicious Hashbrown Avocado Toast recipe featuring crispy air-fried hashbrowns topped with creamy smashed avocado, cottage cheese, fluffy scrambled eggs with melted sharp cheddar, and fresh microgreens. Perfect for a nutritious and satisfying breakfast or brunch in just 15 minutes.

Ingredients

Hashbrowns

  • 2 hashbrown patties

Avocado Topping

  • ½ avocado, smashed
  • Spritz of lemon or lime
  • Salt, to taste

Cottage Cheese Layer

  • ¼ cup cottage cheese

Eggs

  • 2 eggs
  • Pinches of salt, pepper, and all-purpose seasoning
  • Swish of oil (for cooking)
  • Sprinkle of sharp cheddar cheese

Toppings

  • Microgreens
  • Green onions
  • Hot honey
  • Chili crunch oil

Instructions

  1. Cook Hashbrowns: Preheat your air fryer to 390°F. Place the hashbrown patties inside the air fryer basket and cook for 14 minutes, flipping them halfway through to ensure both sides are crispy and golden brown. Remove and set aside.
  2. Prepare Avocado: In a bowl, smash the half avocado until smooth but still slightly chunky. Add a spritz of lemon or lime juice to brighten the flavor and season with salt to taste. Mix well.
  3. Make Scrambled Eggs: Crack the eggs into a small bowl and whisk together with pinches of salt, pepper, and your favorite all-purpose seasoning. Heat a ceramic-coated nonstick skillet over medium-low heat and add a small amount of oil. Pour in the eggs and cook, stirring occasionally—not constantly—until large, soft curds form and the eggs are fully cooked but still tender. Remove from heat, sprinkle with sharp cheddar cheese, and immediately cover the pan with a plate to allow the cheese to melt gently.
  4. Assemble the Toasts: On each crispy hashbrown patty, layer the smashed avocado, followed by a dollop of cottage cheese, then top with the cheesy scrambled eggs. Garnish with microgreens, chopped green onions, and a drizzle of hot honey or chili crunch oil for a spicy-sweet finishing touch. Serve immediately with fresh fruit or sliced veggies on the side for a balanced meal.

Notes

  • You can substitute cheddar cheese with any cheese of your choice or omit it for a dairy-free option.
  • If you don’t have an air fryer, hashbrowns can be cooked in the oven or skillet according to package instructions.
  • Adjust the seasoning and toppings according to your taste preferences for added heat or sweetness.
  • For a lower-fat version, use reduced-fat cottage cheese and limit the amount of oil used for cooking eggs.
