Ingredients

For the Dough

  • 1 cup gluten-free all-purpose flour – or regular all-purpose flour
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 cup plain Greek yogurt

For the Topping

  • 2/3 cup pizza sauce – or more if needed
  • 3/4 cup shredded mozzarella cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and position a rack in the center. Spray a pizza pan or baking sheet with olive oil spray or non-stick cooking spray to prevent sticking and set aside.
  2. Mix the Dry Ingredients: In a medium mixing bowl, combine the gluten-free flour, baking powder, kosher salt, garlic powder, and Italian seasoning to create a self-rising flour mix.
  3. Form the Dough: Add the plain Greek yogurt to the dry mixture and stir with a fork or rubber spatula. Use your hands to knead the mixture into a smooth dough ball, about 2-3 minutes. If the dough feels sticky, sprinkle additional flour onto the dough and your hands.
  4. Shape the Crust: Transfer the dough to the prepared pizza pan or baking sheet. Using your hands, press the dough from the center outwards to shape into a pizza crust. Make sure the crust is evenly pressed to the edges.
  5. Pre-Bake the Crust: Bake the shaped crust for 5 minutes at 400°F. This step helps the crust set before adding toppings.
  6. Add Toppings and Bake: Remove the pre-baked crust from the oven. Spread an even layer of pizza sauce over the crust, leaving about a 3/4 inch border. Sprinkle shredded mozzarella cheese evenly on top. Return the pizza to the oven and bake for an additional 15-17 minutes, until the crust turns golden and cheese is bubbly.
  7. Cool and Serve: Allow the pizza to cool for 5 minutes before slicing. Serve warm and enjoy your gluten-free, protein-packed pizza!

Notes

  • Feel free to add your favorite pizza toppings such as vegetables or cooked meats before the final bake.
  • If the dough is too sticky, add gluten-free flour gradually to make it easier to handle.
  • Use plain Greek yogurt with no added flavors or sweeteners for best results.
  • Check the bottom of the crust to ensure it is cooked through and crispy before removing from the oven.
  • This recipe can be adapted for regular all-purpose flour if gluten is not a concern.
