Ingredients

Fish

  • 12 oz (350g) halibut fish fillet or other white fish
  • 1 tablespoon cornstarch

Ginger

  • 2-inch (5 cm) ginger, peeled, sliced, and cut into thin strips

Sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons water
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 3 dashes ground white pepper

Other

  • 2 tablespoons cooking oil
  • 1 tablespoon chopped scallions

Instructions

  1. Prepare the Fish: Cut the fish into thick, bite-sized pieces. Coat each piece evenly with cornstarch and set aside to ensure a light crust when cooked.
  2. Slice the Ginger: Peel the ginger and slice it into thin strips to infuse flavor during cooking and for garnish.
  3. Make the Sauce: In a small bowl, combine soy sauce, water, sugar, sesame oil, and ground white pepper. Stir well until the sugar dissolves completely.
  4. Heat the Oil and Infuse Ginger: Heat cooking oil in a non-stick skillet or a well-seasoned wok over medium-high heat. Add the ginger strips and stir-fry until they turn light brown and fragrant. Remove the ginger from the oil and set aside, preserving the ginger-infused oil for frying the fish.
  5. Pan-fry the Fish: In the same skillet with the ginger-infused oil, cook the fish pieces over medium-high heat. Fry each side until it turns light to golden brown, handling gently with a spatula, tongs, or long cooking chopsticks to prevent breaking.
  6. Add the Sauce and Finish Cooking: Pour the prepared sauce over the fish and allow it to bubble and thicken slightly. Once the sauce is bubbling, turn off the heat to avoid overcooking.
  7. Serve: Plate the fish, topping it with the fried ginger strips and chopped scallions. Serve immediately alongside steamed rice for a complete meal.
