Instructions

  1. Warm the garlic: In a large pan, heat 2 tablespoons of extra virgin olive oil over medium heat. Add the minced garlic and cook briefly while tossing regularly until it turns just golden and fragrant, about 1-2 minutes, taking care not to burn it.
  2. Cook the beans and tomatoes: Add the drained cannellini beans and ½ cup water to the pan. Season with kosher salt, black pepper, 1 teaspoon Aleppo pepper, and ½ teaspoon cumin. Stir in the halved cherry tomatoes. Continue to cook over medium heat, stirring occasionally, until the beans are warmed through and the tomatoes have softened, about 10 minutes.
  3. Add herbs and cheese: Stir in the chopped fresh parsley, shaved Parmesan cheese, grated Pecorino Romano, and squeeze in the juice of half a lemon. Mix well to combine all the flavors evenly.
