Crispy and flavorful Garlic Parmesan Carrot Fries are a delicious and healthy alternative to traditional fries. Coated in a savory breadcrumb and Parmesan mixture, then baked to perfection, these carrot fries make a perfect side dish or snack for any occasion.

Ingredients

Vegetables

  • 3 medium carrots, cleaned and scrubbed

Coating

  • 1/2 cup bread crumbs
  • 1/4 cup Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper

Other

  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped
  • Splash of lemon juice

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the carrot fries.
  2. Prepare Carrots: Cut carrots in half lengthwise, then slice each half into several thin strips to resemble fries.
  3. Mix Coating: In a shallow dish, combine bread crumbs, Parmesan cheese, garlic powder, salt, and pepper to create the flavorful coating mixture.
  4. Coat Carrots: Toss the carrot strips in olive oil to evenly coat them. Then dip the oiled carrots into the breadcrumb and cheese mixture, ensuring each piece is well coated.
  5. Bake: Arrange the coated carrot fries on a parchment-lined cookie sheet in a single layer. Bake for 15 to 20 minutes or until they are browned and crisp.
  6. Finish and Serve: Remove the fries from the oven, garnish with chopped fresh parsley, sprinkle a little extra salt if desired, and squeeze lemon juice over the top. Serve warm and enjoy!

  • You can substitute bread crumbs with panko for extra crunch.
  • Adjust garlic powder and salt to taste.
  • Serve with your favorite dipping sauce such as ranch or aioli for added flavor.
  • These fries are best eaten immediately to enjoy their crisp texture.
