Ingredients

Meatballs

  • 2 pounds ground turkey
  • 1 small yellow onion, finely minced
  • 6 cloves garlic, finely minced
  • 1 large egg
  • 1/2 cup parmesan cheese, finely shredded
  • 1/4 cup fresh parsley, finely chopped
  • Salt and black pepper, to taste

Garlic Butter Sauce

  • 8 tablespoons butter
  • 6 cloves garlic, finely minced
  • 2/3 cup chicken stock
  • Salt and black pepper, to taste

Garnish

  • 1/2 cup parmesan cheese, finely shredded
  • Fresh parsley, finely chopped

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine 2 pounds of ground turkey, finely minced small yellow onion, 6 cloves of finely minced garlic, 1 large egg, 1/4 cup of finely chopped fresh parsley, and 1/2 cup of finely shredded parmesan cheese. Season with salt and black pepper to taste and mix thoroughly until all ingredients are well incorporated.
  2. Form Meatballs: Shape the mixture into meatballs approximately 2 tablespoons each in size, ensuring they are uniform for even cooking.
  3. Heat the Skillet: Place a large skillet over medium heat and add a few tablespoons of olive oil to prevent sticking.
  4. Brown the Meatballs: Place the meatballs in the skillet and brown on all sides, turning carefully to get an even color. Once browned, transfer the meatballs to a plate and set aside.
  5. Make Garlic Butter Sauce: Add 8 tablespoons of butter to the same skillet. Use a wooden spatula to scrape up the browned bits from the bottom, incorporating the flavorful residue into the butter as it melts.
  6. Sauté Garlic: Add 6 cloves of finely minced garlic to the melted butter and cook while stirring continuously for about 60 seconds, or until the garlic is softened and fragrant but not browned.
  7. Add Chicken Stock: Pour in 2/3 cup of chicken stock and bring the mixture to a low simmer, allowing the sauce to slightly reduce and concentrate in flavor.
  8. Simmer Meatballs: Return the seared meatballs to the skillet, nestling them in the garlic butter sauce. Let them simmer gently until fully cooked through and heated, about 5-7 minutes, stirring occasionally to coat.
  9. Garnish and Serve: Sprinkle with additional parmesan cheese and fresh parsley for an attractive and flavorful finish. Serve immediately, enjoying the rich garlic butter flavor infused throughout each meatball.

Notes

  • Ground turkey is used for a leaner option, but ground beef or chicken can be substituted based on preference.
  • Ensure the garlic does not burn when cooking in butter to avoid bitterness.
  • For a gluten-free version, confirm that chicken stock contains no gluten additives.
  • These meatballs pair well with pasta, rice, or crusty bread to soak up the sauce.
  • Meatballs can be frozen after forming; cook directly from frozen by increasing simmer time.
