A refreshing and vibrant Fresh Tomato Gazpacho with Cucumber, blending ripe vine tomatoes, crisp cucumber, and red pepper into a chilled, flavorful cold soup perfect for hot days or as a light starter.

Ingredients

Vegetables

  • 2 lb vine tomatoes (chopped, about 6 tomatoes)
  • 1/2 cucumber (chopped)
  • 1 red pepper (chopped)
  • 1 shallot (finely chopped)
  • 2 cloves garlic (finely chopped)

Liquids & Seasoning

  • 1/4 cup olive oil (60 ml)
  • 2 tbsp lemon juice (30 ml)
  • 1 tsp sea salt
  • 1/4 tsp pepper

Garnish

  • 1/4 cup fresh basil (chopped, to sprinkle)

Instructions

  1. Peel the Skins From the Tomatoes: Fill a large bowl with ice water. Bring a large pot of water to a boil. Slice a small “X” into the bottom of each tomato and drop them into the boiling water for 30 seconds. Using a slotted spoon, remove the tomatoes and submerge them in the ice water for 1 to 2 minutes. The skins should now easily peel away. Discard the skins and chop the tomatoes into chunks.
  2. Combine Ingredients: In a large mixing bowl, combine the chopped tomatoes, cucumber, red pepper, shallot, garlic, olive oil, lemon juice, sea salt, and pepper. Mix well and let sit for at least 20 minutes to allow the flavors to meld. Stir occasionally.
  3. Blend the Soup: Transfer all ingredients to a blender and blend on high speed until smooth and creamy. Chill the gazpacho in the refrigerator for at least 2 hours to enhance flavors and serve cold.
  4. Serve: Pour the chilled gazpacho into bowls and sprinkle with fresh chopped basil before serving.

Notes

  • For best flavor, let the gazpacho chill for several hours or overnight.
  • If you prefer a chunkier texture, blend for a shorter time or pulse the blender.
  • Adjust seasoning with extra salt, lemon juice, or pepper to taste before serving.
