This Focaccia Pizza recipe combines the airy, dimpled texture of classic focaccia bread with the flavors of a pizza, making it a versatile and delicious dish perfect as a snack, appetizer, or light meal. The dough is stretched in a pan, generously dimpled with olive oil, sprinkled with flaky sea salt and rosemary or your choice of toppings, then baked until golden and crisp.

Ingredients

Focaccia Pizza Dough

  • 1 lb pizza dough (store-bought or homemade)

Olive Oil and Seasoning

  • 6 tbsp extra virgin olive oil, divided (use high-quality for best flavor)
  • 2 tsp flaky sea salt or coarse sea salt

Topping Options (optional)

  • Fresh rosemary
  • Sliced red onions or shallots
  • Pitted olives
  • Cherry tomatoes
  • Fresh or roasted garlic
  • Diverse herbs
  • Shredded parmesan cheese
  • Sliced sweet or spicy peppers

Instructions

  1. Prep Dough: Prepare homemade pizza dough using your favorite recipe or thaw store-bought dough and let it rest at room temperature in a warm spot for 30-45 minutes. Remove dough from packaging before working with it.
  2. Mold Dough to the Pan: Generously coat a 9×13-inch baking pan with 2 tablespoons of extra virgin olive oil. Place the dough in the pan and gently stretch it to cover the entire surface. If the dough resists stretching, let it rest for 10-15 minutes, then try again. Cover with a damp towel and allow it to rest for 45-60 minutes to rise and relax.
  3. Create the Dimples: Pour 4 tablespoons of olive oil over the dough. Using your fingertips, quickly poke straight down into the dough repeatedly, creating deep dimples across the surface—similar to playing piano keys. This helps create the characteristic focaccia texture and holds pockets of olive oil.
  4. Add Toppings: For a classic focaccia, sprinkle flaky sea salt and fresh rosemary into the dimples. For varied flavors, add toppings like sliced red onions, olives, cherry tomatoes, garlic, herbs, parmesan cheese, or peppers. Arrange creatively across the dough’s surface.
  5. Bake the Focaccia: Preheat your oven to 450°F (232°C). Bake the dough for 22-25 minutes until the crust turns golden brown and crisp—25 minutes preferred for extra crispness. Once baked, transfer immediately to a wire rack and allow it to rest for 10 minutes prior to slicing and serving.

Notes

  • Using a high-quality extra virgin olive oil greatly enhances the focaccia’s flavor.
  • Resting the dough allows gluten to relax, making stretching easier and results in a tender crumb.
  • Dimpling the dough is essential—it traps olive oil and creates the signature focaccia texture.
  • Feel free to customize toppings to your liking; focaccia is highly versatile.
  • Serve warm or at room temperature, excellent alongside soups, salads, or as a standalone snack.
