Fluffy Turkish Bread, also known as Pide Bread, is a soft and airy flatbread with a golden crust topped with sesame and nigella seeds. This traditional bread is easy to make at home, featuring a tender crumb achieved by mixing and letting the dough rise before baking at a high temperature for a perfect finish. Ideal for serving with dips, spreads, or as a side to your favorite meals.

Ingredients

Dough Ingredients

  • 500 g Flour (All-Purpose or bread flour)
  • 1 tbsp Instant yeast
  • 1 tbsp Granulated sugar
  • 1 tsp Kosher salt
  • 1 2/3 cups Water

Egg Wash

  • 1 Egg yolk
  • 1 tbsp Yogurt
  • 1 tbsp Water

Toppings

  • 1 tsp Sesame seeds
  • 1 tsp Nigella seeds

Instructions

  1. Mix dry ingredients: In a large mixing bowl, sift the flour and add instant yeast, kosher salt, and sugar. Mix these dry ingredients well to combine evenly.
  2. Add water and knead dough: Pour in the water and stir until the mixture begins to come together. Transfer the dough to a stand mixer and knead on medium-high speed for 8-10 minutes until a soft, elastic dough forms.
  3. First rise: Cover the dough with a towel and let it rise in a warm spot for 1 hour or until it has doubled in size.
  4. Punch down and divide: After rising, punch down the dough to release air. Transfer it onto a floured surface and divide it into two equal-sized pieces.
  5. Shape and rest: Shape each piece into a ball, then roll each ball into a circle with a rolling pin. Cover with a towel and let rest for 20-30 minutes. Meanwhile, preheat your oven to its highest temperature.
  6. Prepare egg wash: In a small bowl, whisk together the egg yolk, yogurt, and water until smooth.
  7. Create pattern: Use your fingertips to press indentations around the edges of each dough round, pressing 3-4 rows of dimples inside the circle to create a traditional pattern.
  8. Apply egg wash and add seeds: Brush each dough circle generously with the egg wash, then sprinkle evenly with sesame seeds and nigella seeds.
  9. Bake the bread: Place the prepared dough circles on a baking sheet and bake in the preheated oven at approximately 225°C (440°F) on the middle rack for 15-20 minutes, or until golden brown and cooked through. Avoid overbaking to keep the bread soft.
  10. Final touch and serve: Optional: brush the hot Turkish flatbread with olive oil for a shiny finish and extra flavor. Serve warm with your favorite dips or alongside meals.
