Ingredients

Sauce Ingredients

  • 6 tablespoons sriracha (or more)
  • 6 tablespoons brown sugar
  • 2 tablespoons soy sauce (low sodium)
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 tablespoon water

Main Ingredients

  • 1 tablespoon oil
  • 1 small onion (finely diced)
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 pound ground chicken
  • 14 ounces coleslaw mix (1 bag)
  • 1 cup matchstick carrots
  • 1 cup frozen edamame
  • 1 head lettuce (for wrapping)

Garnishes

  • Green onions
  • Roasted sesame seeds
  • Microgreens

Instructions

  1. Prepare the sauce: In a small bowl, combine the sriracha, brown sugar, low sodium soy sauce, red pepper flakes, salt, and water. Stir well until all ingredients are evenly mixed and set aside to develop flavor.
  2. Sauté onions and garlic: Heat the oil in a large skillet over medium heat. Add the finely diced onions and cook for about 2 minutes until they begin to soften. Then add the minced garlic and an additional teaspoon of salt and sauté for another minute to release their aroma.
  3. Cook the ground chicken: Push the onions and garlic to the side of the skillet. Add the ground chicken into the center and cook for 6 to 7 minutes, breaking it apart with a spatula to ensure it cooks evenly and thoroughly until no pink remains.
  4. Add vegetables and sauce: Stir in the coleslaw mix, matchstick carrots, frozen edamame, and the prepared sauce. Mix all ingredients well. Cook for around 5 minutes, or until the edamame is heated through and the vegetables have softened to your preference.
  5. Assemble the wraps: Remove the skillet from heat. Spoon the flavorful chicken and vegetable mixture into individual lettuce leaves. Garnish each wrap with chopped green onions, roasted sesame seeds, and fresh microgreens for added texture and flavor. Serve immediately.

Notes

  • Adjust the amount of sriracha according to your heat preference.
  • Use butter lettuce or iceberg lettuce leaves for sturdy wraps.
  • The dish can be served with a side of steamed rice for a more filling meal.
  • Frozen edamame should be thawed or cooked thoroughly before serving.
  • For a gluten-free version, substitute soy sauce with tamari or a gluten-free soy sauce alternative.
