Ingredients

Instructions

  2. Add Espresso Grounds & Cool: Stir in the ground espresso evenly throughout the browned butter, then set the bowl aside to cool to room temperature, which takes about 20-30 minutes.
  3. Incorporate Sugars: Whisk in both the light brown sugar and granulated sugar for about one minute until well combined and slightly creamy.
  4. Mix in Eggs and Vanilla: Whisk in the large egg, egg yolk, and vanilla bean paste until the mixture is smooth and homogenous.
  5. Combine Dry Ingredients and Chocolate: Fold in the all-purpose flour, baking soda, salt, and chopped semi-sweet chocolate or chocolate chips gently until just combined, avoiding overmixing.
  6. Chill the Dough: Scoop the cookie dough onto a parchment-lined baking tray. Place the tray in the freezer and chill for at least 3-4 hours; for optimal flavor and texture, chill overnight.
