This Easy Peach and Raspberry Cobbler is a delightful fruit dessert featuring juicy peaches and fresh raspberries, topped with a golden, buttery cobbler crust sprinkled with flaked almonds. Ingredients

Fruit Filling

  • 5 peaches, cut into wedges
  • 125 g fresh raspberries
  • 75 g caster sugar

Cobbler Topping

  • 140 g plain flour
  • 1 teaspoon baking powder
  • 90 g caster sugar
  • 90 g cold butter (salted or unsalted)
  • 2 teaspoons milk
  • 2 tablespoons flaked almonds
  • Zest of 1 lemon

Instructions

  1. Preheat the Oven: Preheat your oven to 160°C for a fan oven or 170°C for a conventional oven to ensure it reaches the right temperature for baking the cobbler evenly.
  2. Prepare the Fruit: Cut the peaches into chunky slices and place them in a bowl. Add the fresh raspberries and 75 g caster sugar, then toss gently to combine. Transfer the fruit mixture to an ovenproof baking dish and set aside.
  3. Make the Cobbler Topping: In a large bowl, mix together the plain flour, baking powder, and 90 g caster sugar. Using your fingers, rub in the cold butter until the mixture resembles coarse crumbs with pea-sized pieces of butter. Add the milk and mix until the dough comes together to a soft cookie dough-like consistency.
  4. Assemble the Cobbler: Spoon the cobbler topping evenly over the fruit in the baking dish. Sprinkle with flaked almonds and optionally with demerara sugar for added crunch and sweetness.
  5. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the fruit mixture is juicy and bubbling at the edges and the cobbler topping is golden brown and fluffy.
