This Easy Microwave Lemon Mug Cake is a quick and delightful single-serving dessert, perfect for when you want a fresh, tangy treat without the fuss. Made without eggs and baked right in a mug, it combines the zest and juice of fresh lemons with a soft, moist cake texture, all topped with a simple lemon glaze. Ready in just five minutes, it’s an ideal sweet snack or light dessert for any time of day.

Ingredients

Dry Ingredients

  • ¼ cup all purpose flour
  • 3 Tbsp granulated sugar
  • ½ tsp baking powder
  • ⅛ tsp salt

Wet Ingredients

  • 3 Tbsp milk (or substitute non-dairy milk)
  • 1 Tbsp oil (or melted butter)
  • 1 Tbsp fresh lemon juice
  • 1 tsp fresh lemon zest

Glaze

  • 2 Tbsp powdered confectioner’s sugar
  • ½ tsp lemon juice (or more as needed for desired consistency)

Instructions

  1. Add Dry Ingredients: In a microwave-safe mug, combine all the dry ingredients – flour, sugar, baking powder, and salt. Mix well to ensure even distribution of leavening agents and sugar.
  2. Add Wet Ingredients: Pour in the milk, oil, fresh lemon juice, and lemon zest. Stir gently until just combined, taking care not to overmix to maintain a light texture.
  3. Cook: Place the mug in the microwave and cook on high for 1 minute. If the cake doesn’t seem set in the center, continue cooking in 15-second intervals until the center is firm. The top may look shiny but shouldn’t be wet and should spring back when touched lightly.
  4. Mix Glaze: While the cake rests for a minute to cool slightly, whisk together the powdered sugar and lemon juice in a small bowl until smooth. Adjust lemon juice to reach your desired glaze consistency.
  5. Serve: Drizzle the lemon glaze over the top of the mug cake and enjoy immediately while warm.

Notes

  • You can substitute non-dairy milk such as almond or oat milk to make the cake dairy-free.
  • For a richer flavor, use melted butter instead of oil.
  • Adjust the lemon juice in the glaze to your preferred tartness and consistency.
  • Microwave power levels vary; keep an eye on cooking time to avoid overcooking or drying the cake.
  • This recipe is a single serving, making it perfect for quick indulgence without leftovers.
