Easy Lace Cookies are delicate, thin, and crisp almond cookies made with simple ingredients like butter, brown sugar, and almond flour. Ingredients

Cookie Dough

  • 1/2 cup (8 Tbsp; 113g) unsalted butter
  • 2/3 cup (130g) packed light or dark brown sugar
  • 3/4 cup (75g) almond flour
  • 1/4 teaspoon salt
  • 1 Tablespoon (15ml) light or dark corn syrup or milk
  • 1 teaspoon vanilla bean paste

Optional Filling

  • 1/2 cup Nutella or melted chocolate

Instructions

  1. Melt Butter and Combine Ingredients: Melt butter in a medium saucepan over low heat. Once melted, add the brown sugar, almond flour, salt, and corn syrup or milk. Cook while whisking continuously until the sugar dissolves and the mixture is fully combined, about 3-4 minutes. If the butter separates, remove from heat and whisk vigorously to recombine.
  2. Add Vanilla and Thicken Mixture: Remove the pan from the heat and whisk in the vanilla bean paste. The mixture will be shiny and grainy. Let it sit for 5-10 minutes to thicken as the oven preheats.
  3. Prepare Baking Sheets: Preheat the oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats.
  4. Drop Dough and Bake: Drop scant teaspoonfuls of the mixture about 3 inches apart on the prepared baking sheets (each cookie about 1 scant teaspoon, not tablespoon). Bake for 6-8 minutes until the edges turn golden brown and the cookies bubble and sizzle.
  5. Cool Cookies: Let the cookies cool on the baking sheets for 5 minutes to set, then transfer to a wire rack to cool completely. They will crisp up as they cool.
  6. Add Optional Filling: Once cool, enjoy as is or sandwich two cookies together with Nutella or melted chocolate spread on the inside of one cookie.
  7. Store Properly: Store cookies without filling covered at room temperature for up to 1 week. Cookies with Nutella or chocolate filling keep covered at room temperature for 3 days or refrigerated for up to 1 week.
