Instructions

  1. Preheat and Grease: Preheat your oven to 350°F (175°C) and line a regular muffin tin with paper muffin liners to prevent sticking and ease cleanup.
  2. Beat Oil and Sugar: In a large mixing bowl, beat together the sunflower oil and sugar until well combined, creating a smooth base mixture.
  3. Add Eggs and Milk: Crack in the eggs and pour the unsweetened almond milk. Mix thoroughly until the mixture is uniform and pale yellow.
  4. Whisk Dry Ingredients: In a separate medium bowl, whisk together the gluten-free all-purpose flour, gluten-free oat flour, baking powder, salt, rolled oats, and ground cinnamon to ensure even distribution of leavening and spices.
  5. Combine Dry and Wet Ingredients: Gradually add the dry ingredients into the wet mixture. Stir well until a consistent batter forms without overmixing.
