This Easy Fried Rice recipe is a quick and delicious way to transform leftover cooked rice into a flavorful, satisfying dish.   • 3 cups cooked rice
  • 2 tablespoons sesame oil
  • 1 cup chopped white onion (1 small onion)
  • 1 cup frozen peas and carrots
  • 2-3 tablespoons soy sauce (more or less to taste)
  • 2 lightly beaten eggs
  • 2 tablespoons chopped green onions (optional, for garnish)

Instructions

  1. Preheat and sauté vegetables: Preheat a large skillet or wok over medium heat. Add 2 tablespoons of sesame oil, then add 1 cup chopped white onion and 1 cup frozen peas and carrots. Cook and stir until the vegetables become tender, about 5 minutes.
  2. Scramble the eggs: Push the cooked vegetables to one side of the skillet. Pour the 2 lightly beaten eggs into the empty side. Using a spatula, gently scramble the eggs until fully cooked, then mix them thoroughly with the sautéed vegetables.
  3. Add rice and soy sauce: Add the 3 cups of cooked rice into the skillet with the vegetable and egg mixture. Pour 2 to 3 tablespoons of soy sauce over the top. Stir continuously to combine all the ingredients and heat the rice through evenly, approximately 3 to 5 minutes.
  4. Serve and garnish: Remove from heat once everything is hot and well combined. Garnish with 2 tablespoons chopped green onions, if desired, and serve immediately to enjoy the dish at its best.

  • Use leftover rice that is a day old for the best texture and less moisture.
