This easy chicken breakfast sausage recipe infuses ground chicken with a delightful blend of maple syrup and aromatic herbs like sage, thyme, and nutmeg. These savory and slightly sweet patties are perfect for a quick and flavorful breakfast or brunch, offering a healthier alternative to traditional pork sausages.

Ingredients

Chicken Sausage Mixture

  • 1 pound ground chicken
  • 2 tablespoons maple syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon dried sage
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ¼ teaspoon nutmeg

For Cooking

  • 1 tablespoon extra-virgin olive oil

Instructions

  1. Mix together. In a large bowl, use your hands to thoroughly combine the ground chicken, maple syrup, kosher salt, dried sage, garlic powder, onion powder, dried thyme, black pepper, and nutmeg until the mixture is well blended and uniform in texture.
  2. Form balls. Using a cookie scoop or your hands, portion the mixture into 12 equal balls. This helps ensure even cooking and consistent sausage size.
  3. Cook. Heat the olive oil in a large non-stick skillet over medium heat. Place six balls in the pan, spacing them apart. Wet your fingers to prevent sticking, then gently press each ball flat to form patties. Cook for 2 to 3 minutes on each side until each side is nicely browned and the chicken is cooked through. Repeat with the remaining six patties, adding a splash of olive oil to the pan if necessary.
  4. Serve. Transfer the cooked breakfast sausage patties to a serving plate. Serve warm alongside your favorite breakfast sides and enjoy!

Notes

  • Wetting your fingers before pressing the patties helps prevent the meat from sticking to your hands.
  • Ensure the chicken is cooked through to an internal temperature of 165°F (74°C) for safety.
  • You can store leftover cooked patties in the refrigerator for up to 3 days or freeze them for longer storage.
  • Maple syrup adds a subtle sweetness that balances the savory spices, but you can adjust the amount to your taste.
