Ingredients

Dry Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt

Wet Ingredients

  • 2 cups milk of choice (unsweetened vanilla almond milk recommended)
  • ¼ cup maple syrup
  • 1 large egg or 1 Tablespoon ground flaxseed (for vegan option)
  • 1 Tablespoon melted coconut oil
  • 1 teaspoon vanilla bean paste
  • 2 ripe bananas, sliced OR ½ cup unsweetened applesauce

Add-Ins

  • 1 ½ cups chopped pecans, divided OR your choice of mixed nuts, fruit, and/or chocolate

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and spray an 8×8 inch square baking dish with cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, and sea salt. Stir them together thoroughly to distribute the leavening and spices evenly.
  3. Combine Wet Ingredients: Add the milk, maple syrup, egg (or ground flaxseed for vegan), melted coconut oil, vanilla bean paste, and sliced bananas (or applesauce) to the dry ingredients. Stir well to form a homogenous oatmeal batter.
  4. Add Pecans: Fold in 1 cup of chopped pecans (or your chosen mix-ins) evenly throughout the batter for added texture and flavor.
  5. Transfer to Baking Dish: Pour the oatmeal mixture carefully into the prepared baking dish, smoothing the top with a spatula.
  6. Top with Remaining Pecans: Scatter the remaining ½ cup pecans evenly on top of the batter for a crunchy topping.
  7. Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the top is golden brown and the center is set.
  8. Cool and Serve: Remove from oven and allow the baked oatmeal to cool for a few minutes. Portion into servings and optionally drizzle each portion with extra maple syrup for additional sweetness.

Notes

  • To make this recipe vegan, use ground flaxseed instead of egg and ensure plant-based milk is used.
  • Customize your mix-ins by substituting pecans with walnuts, almonds, dried fruit, or chocolate chips.
  • Leftovers can be stored covered in the refrigerator for up to 5 days or frozen for longer storage.
  • For a nuttier flavor, toast the pecans slightly before adding.
  • This recipe works well for meal prep and can be reheated in the microwave or oven.
