Dynamite Shrimp is a crispy and flavorful appetizer featuring large shrimp coated in a light, tempura-style batter and fried to golden perfection. Tossed in a spicy, sweet, and creamy sauce made with mayonnaise, sweet chili sauce, honey, and sriracha, this dish offers a perfect balance of heat and sweetness that makes it an irresistible treat.

Ingredients

Shrimp and Batter

  • 1 pound large shrimp, peeled and deveined (tails on)
  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • ½ cup cold water
  • ¼ cup cold club soda
  • 1 egg
  • Vegetable oil, for frying

Sauce

  • ⅓ cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce

Instructions

  1. Prepare the Shrimp: Remove the shells and devein the shrimp, leaving the tails intact. Pat the shrimp dry using paper towels to ensure the batter adheres well.
  2. Mix Dry Ingredients: In a medium bowl, sift together the all-purpose flour and cornstarch. Set this mixture aside.
  3. Prepare Wet Ingredients: In another bowl, whisk together the cold water, cold club soda, and egg until well combined.
  4. Combine Batter: Pour the wet mixture into the dry flour mixture and stir gently with a fork until just combined. It’s okay if the batter remains slightly lumpy; avoid overmixing.
  5. Heat Oil: Heat vegetable oil in a deep skillet over high heat or use a deep fryer, ensuring the oil reaches a temperature around 350°F (175°C) for optimal frying.
  6. Batter and Fry Shrimp: While the batter is still chilled, quickly dip each shrimp into the batter, ensuring it is coated evenly. Carefully place the battered shrimp in the hot oil and fry until golden and crispy, about 2-3 minutes per batch.
  7. Drain Fried Shrimp: Using a slotted spoon, remove the fried shrimp from the oil and transfer them to a paper towel-lined plate to drain excess oil.
  8. Make the Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, honey, and sriracha sauce until smooth and well combined.
  9. Toss Shrimp with Sauce: Place the cooked shrimp into a large bowl, pour the prepared sauce over them, and gently toss until all shrimp are evenly coated.
  10. Serve: Optionally garnish with red pepper flakes for extra heat and serve immediately while crispy and saucy.
