This homemade Dumpling Wrappers recipe guides you through making delicate, pliable wrappers perfect for crafting authentic dumplings. Using simple ingredients like all-purpose flour and warm water, the recipe ensures a smooth and supple dough that is easy to roll out into thin circles, ready to hold your favorite fillings. With tips on kneading, resting the dough, rolling techniques, and storage options, this recipe is ideal for both beginners and experienced cooks looking to perfect their dumpling-making skills.

Ingredients

Dough Ingredients

  • 320 grams all-purpose flour (2 1/4 cups using dip-and-sweep method; 2 2/3 cups using spoon-and-sweep method)
  • 175 grams (3/4 cup/175ml) very warm water (110ºF to 130ºF)

Instructions

  1. Mix Ingredients: Pour all the flour and warm water into a mixing bowl. Use chopsticks or a wooden spoon to stir the mixture until all the water is absorbed and shaggy dough forms.
  2. Begin Kneading: Use your hands to gather the dough, digging in with your fingers in a claw-like motion to evenly distribute moisture.
  3. Knead on Surface: Take the dough out and knead it on a clean surface for 2 to 3 minutes until slightly tacky but not sticky, dust surface with a little flour if necessary.
  4. Rest the Dough: Form the dough into a smooth ball, place it back into the bowl and cover with a damp towel or silicone lid. Let it rest for at least 45 minutes to achieve a supple texture.
  5. Stretch and Shape Dough Rope: Remove the dough, knead a few times, then create a hole in the center and stretch it into a large ring. Cut the dough into a thick rope approximately 1 1/2 inches in diameter.
  6. Divide Dough: Cut the dough rope into small pieces weighing about 12 to 13 grams each (~1 tablespoon per piece). Cover the remaining dough to prevent drying.
  7. Form Dough Balls: Roll each piece into a ball and flatten into a disc about 1 1/2 inches in diameter. Lightly dust with flour.
  8. Roll Out Wrappers: Using a rolling pin, roll each disc while rotating it 90 degrees repeatedly to achieve two revolutions, ensuring the rolling pin maintains contact with the dough surface.
  9. Thicken Center: On the third revolution, roll only halfway before rotating to keep the center slightly thicker than edges, repeating 1 to 2 revolutions.
  10. Thin Out Edges: For the final revolution, roll only around the edges about 1/2 inch deep, rolling the wrapper out to 3 1/4 to 3 1/2 inches in diameter (or up to 3 3/4 inches for larger wrappers).
  11. Cover and Rest: Dust finished wrapper with flour, cover with a dry towel, and repeat rolling for remaining dough discs, handling no more than 5 wrappers at a time.
  12. Store Wrappers: To store, brush rolled wrappers with potato starch or tapioca starch before stacking. Wrap tightly with plastic wrap and refrigerate up to 2 days or freeze for up to 1 month, preventing freezer burn.

Notes

  • For measuring flour, use the dip-and-sweep method for 2 1/4 cups or spoon-and-sweep for 2 2/3 cups for accuracy.
  • Warm water between 110ºF and 130ºF helps gelatinize the starch for better dough texture.
  • If using a stand mixer, use the dough hook attachment on low speed to combine and knead the dough similarly.
  • A longer resting time of at least 45 minutes results in more supple dough, making the wrappers easier to roll out.
  • If dough is sticky while kneading, dust the surface with a little flour but avoid adding too much to maintain wrapper pliability.
  • Flatten dough pieces into discs roughly 1 1/2 inches in diameter for consistent wrapper size.
  • Rolling technique ensures the wrapper center stays thicker than the edges, which prevents tearing when filled.
  • Do not roll out more than 5 wrappers at once to prevent drying and cracking.
