These Date Snickers are a quick and easy no-bake dessert inspired by classic Snickers bars, using sweet Medjool dates filled with creamy peanut butter, crunchy chopped peanuts, and topped with rich dark chocolate and a sprinkle of flaky sea salt. Perfectly portioned and naturally sweet, they come together in under 20 minutes and are a healthy alternative to traditional candy bars.

Ingredients

Filling

  • 9 squishy Medjool dates
  • 3 tablespoons peanut butter (or other nut butter)
  • 2 tablespoons chopped peanuts

Topping

  • ¼ cup dark chocolate chips
  • Flaky sea salt (optional topping)

Instructions

  1. Prepare the Dates: Use your fingers or a knife to carefully split each Medjool date in half and remove the pit from the center. Arrange the date halves cut-side up on a parchment-lined plate to make filling easier.
  2. Fill with Peanut Butter and Nuts: Add approximately ½ teaspoon of peanut butter to the center of each date half. Then sprinkle the chopped peanuts evenly over the peanut butter to add a satisfying crunch to each piece.
  3. Melt the Chocolate: In a double boiler setup, melt the dark chocolate chips gently. To create a double boiler, bring about an inch of water to a boil in a small saucepan, then place a heat-safe bowl with chocolate chips on top, stirring until smooth. Alternatively, melt chocolate carefully in short bursts in the microwave, stirring in between.
  4. Drizzle Chocolate Over Dates: Using a spoon, drizzle the melted chocolate over the top of each stuffed date half, covering only the top since the dates are already sweet. While the chocolate is still glossy, sprinkle a light pinch of flaky sea salt on each piece if desired to enhance the flavor.
  5. Chill to Set: Place the plate in the refrigerator for about 10 minutes or until the chocolate has firmed up. Once set, these Date Snickers are ready to enjoy.
  6. Storage: Store these treats at room temperature for up to one week or in an airtight container in the refrigerator for up to one month to keep them fresh.

Notes

  • Nutrition information is estimated for two stuffed date halves, assuming a total of 18 pieces made with the listed ingredients; actual values may vary.
  • Nut Variation: If you don’t prefer peanuts, substitute with cashews, almonds, pistachios, or sunflower seeds. Similarly, you can swap the peanut butter for any nut butter of your choice.
  • For best flavor balance, choose a salted nut butter to prevent the treat from becoming too sweet.
