Instructions

  1. Preheat Oven: Preheat your oven to 400°F (210°C) to prepare for baking the spiralized potatoes.
  2. Prepare Potatoes: Wash the potatoes thoroughly and remove the skins if desired. Using a spiralizer with a medium blade, spiralize each potato into noodle-like strips.
  3. Dry Potatoes: Use a kitchen towel or paper towels to press and squeeze the spiralized potatoes gently, removing any excess moisture to help achieve crispiness during baking.
  4. Prepare Onion: Peel and thinly slice the red onion. Alternatively, spiralize the onion if your spiralizer can accommodate it.
  5. Season and Coat: Spread the potato and onion noodles evenly on a parchment-lined baking sheet. Drizzle with extra-virgin olive oil and sprinkle with salt, pepper, chili flakes, dried oregano, and freshly chopped rosemary. Toss with your fingers to coat everything evenly.
  6. Bake: Place the baking sheet in the oven. After 15 minutes, monitor the noodles closely; if any bits brown too quickly, cover them loosely with aluminum foil. Continue baking for a total of 30 minutes or until the potatoes are crisp and cooked through.
