Ingredients

Chicken and Coating

  • 4 large skinless boneless chicken breasts
  • ⅓ cup (43g) all purpose flour
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • ¾ cup (42g) Panko bread crumbs
  • ¾ cup (85g) shredded monterey jack or cheddar cheese
  • 2 tablespoon Frank’s Red Hot seasoning blend
  • Salt (to taste)
  • Pepper (to taste)

Buffalo Ranch Mixture for Dipping

  • ¼ cup (60ml) ranch dressing
  • ¼ cup (60ml) buffalo sauce

Drizzling Sauce

  • 6 tablespoons (90ml) ranch dressing
  • 6 tablespoons (90ml) buffalo sauce

Instructions

  1. Preheat oven – Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper or aluminum foil and set it aside to prepare for baking.
  2. Prepare chicken breasts – Pound the chicken breasts to an even thickness to ensure uniform cooking throughout the chicken.
  3. Mix coatings – In a medium dish, combine the flour with ½ teaspoon salt and ⅛ teaspoon pepper. In a separate dish, mix the ranch dressing and buffalo sauce. In another dish, prepare the panko mixture by combining panko bread crumbs, shredded cheese, Frank’s Red Hot seasoning, and additional salt and pepper to taste.
  4. Coat chicken – Dip each chicken breast first into the seasoned flour mixture, coating both sides. Then dip into the buffalo ranch mixture, shaking off excess. Finally, coat both sides thoroughly with the panko mixture, pressing it firmly onto the chicken. Arrange the coated breasts onto the prepared baking sheet. Distribute any remaining panko mixture evenly over the tops, pressing lightly.
  5. Bake chicken – Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F. If the topping begins to brown too quickly, tent with foil to prevent burning and continue baking until done.
  6. Prepare drizzling sauce – While the chicken bakes, combine the 6 tablespoons each of ranch dressing and buffalo sauce in a small bowl to make the drizzling sauce.
  7. Serve – Once the chicken is fully cooked, remove from the oven and drizzle the buffalo ranch sauce over the top. Serve hot with your choice of sides.
