Ingredients

Vegetables and Herbs

  • 1 onion, finely chopped
  • 2-3 garlic cloves, minced or pressed
  • 6-7 mushrooms, finely chopped
  • A handful of fresh sage leaves
  • 2 cups peas (frozen or canned)

  • 12 oz vegan chicken pieces

  • 14 oz pasta

Liquids and Dairy Alternatives

  • 4 cups water or vegetable stock
  • 500 ml oat cream

Instructions

  1. Prepare the aromatics: Finely chop the onion and mushrooms, and mince or press the garlic cloves. Heat some oil in a large pan or pot and add the onion and garlic. Stir and cook for a couple of minutes until they start to soften and become fragrant.
  2. Add vegan chicken: Add the vegan chicken pieces to the pan and cook for a few minutes, stirring occasionally, until they begin to brown slightly.
  3. Cook mushrooms: Add the chopped mushrooms to the pan and continue cooking for another couple of minutes, allowing them to soften and release their moisture.
  4. Add liquids and pasta: Pour in the oat cream, water or vegetable stock, and add the fresh sage leaves along with the pasta. Stir all ingredients together well, then bring the mixture to a simmer. Cook uncovered, stirring occasionally, until the pasta is al dente and the sauce has thickened, about 10-12 minutes.
  5. Finish with peas and seasoning: Stir in the peas along with salt and black pepper to taste. Cook for an additional minute to heat the peas through. Adjust the creaminess by adding a little more oat cream if desired before serving.
