A rich and flavorful creamy mushroom sauce made with sautéed cremini mushrooms, onions, garlic, and a blend of seasonings, finished with heavy cream and fresh parsley. Perfect for topping steaks, chicken, pasta, or vegetables, this sauce delivers a comforting and indulgent taste with minimal effort.

Ingredients

Primary Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 ounces cremini or white mushrooms, sliced
  • 1/2 medium onion, chopped
  • 4 cloves garlic, minced

Seasonings & Liquids

  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon Italian seasoning
  • 1/2 teaspoon lemon juice
  • 1/4 cup broth (chicken or vegetable)
  • 3/4 cup heavy/whipping cream
  • Salt & pepper, to taste
  • 1-2 tablespoons chopped fresh parsley

Instructions

  1. Heat fats: Add the olive oil and butter to a skillet over medium-high heat. Allow the butter to melt fully before proceeding to ensure an even cooking base.
  2. Sauté mushrooms and onions: Add the sliced mushrooms and chopped onions to the skillet. Cook for about 10 to 12 minutes, stirring occasionally, until the mushrooms release their moisture and it evaporates, resulting in nicely seared mushrooms and softened onions.
  3. Add aromatic seasonings: Reduce the heat to medium and stir in the minced garlic, Dijon mustard, Italian seasoning, and lemon juice. Cook this mixture for approximately 30 seconds to let the flavors release without burning the garlic.
  4. Deglaze with broth: Pour in the chicken or vegetable broth and let it bubble for 30 seconds to 1 minute. This step lifts any browned bits from the skillet and builds depth in the sauce.
  5. Add cream and thicken sauce: Stir in the heavy whipping cream and cook for an additional 3 to 5 minutes. Continue to simmer until the sauce has thickened to your preferred consistency.
  6. Season and finish: Adjust seasoning by adding salt and pepper to taste. Finally, stir in the fresh chopped parsley to add brightness. Serve the sauce immediately for the best flavor and texture.

Notes

  • This sauce pairs beautifully with grilled meats, roasted vegetables, or pasta dishes.
  • You can substitute heavy cream with half-and-half for a lighter version, but the sauce will be less rich.
  • For a vegetarian option, use vegetable broth instead of chicken broth.
  • Fresh parsley adds a nice pop of color and freshness at the end—do not skip it.
  • Ensure not to burn the garlic; adding it after reducing heat helps prevent this.
  • To keep the mushrooms from steaming instead of searing, cook them without stirring for the first few minutes to allow the moisture to escape.
