Creamy Mushroom and Spinach Gnocchi is a comforting and flavorful dish featuring tender potato gnocchi cooked in a rich cream sauce with sautéed cremini mushrooms, fresh spinach, and Parmesan cheese. This quick and easy skillet recipe balances earthy mushrooms with the freshness of spinach, all brought together by a smooth, cheesy sauce seasoned with Dijon mustard and Italian herbs. Perfect for a satisfying weeknight dinner in just 30 minutes.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 12 ounces cremini mushrooms, sliced
  • 2-3 cloves garlic, minced
  • 1/4 teaspoon Italian seasoning
  • 1 heaping teaspoon Dijon mustard
  • 1/3 cup chicken stock
  • 1 cup heavy/whipping cream
  • 1 pound uncooked potato gnocchi
  • 2 cups (packed) fresh baby spinach
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, to taste

Instructions

  1. Sauté Onions: Add the olive oil to a skillet over medium-high heat. Add the chopped onion and sauté for about 5 minutes, stirring occasionally. Allow the onions to soften and lightly brown for enhanced flavor.
  2. Cook Mushrooms & Garlic: Add the sliced cremini mushrooms, minced garlic, and Italian seasoning to the skillet. Continue to cook for another 5 minutes, stirring occasionally, until mushrooms are tender and fragrant.
  3. Add Dijon & Stock: Stir in the Dijon mustard and chicken stock. Let the mixture bubble for a minute to meld the flavors.
  4. Add Cream & Gnocchi: Pour in the heavy cream and add the uncooked potato gnocchi. Wait until the mixture starts to bubble again, then cover the pan and reduce heat to medium-low. Cook for 3 minutes to allow the gnocchi to soften.
  5. Add Spinach: Stir in the fresh baby spinach, cover the pan again, and cook for an additional 3 minutes until the spinach wilts and gnocchi is fully cooked.
  6. Finish with Cheese & Seasoning: Stir in the freshly grated Parmesan cheese and season with salt and pepper to taste. Check the gnocchi’s tenderness and cook a few more minutes if needed. Garnish with chopped fresh parsley and serve immediately. Optionally, add extra grated Parmesan on top.

Notes

  • You can substitute vegetable broth for chicken stock for a vegetarian version (adjust diet accordingly).
  • Use gluten-free gnocchi to make this dish gluten-free.
  • For a lighter version, substitute heavy cream with half-and-half or a cream alternative.
  • Ensure gnocchi is fully cooked; cooking times can vary based on brand.
  • Fresh parsley adds bright color and a fresh herbal note but can be omitted if unavailable.
