Vegetables

  • 1 lb fresh green beans, rinsed, trimmed and halved
  • 8 ounces cremini or white mushrooms, sliced
  • 3 garlic cloves, minced

  • 3 tablespoons unsalted butter, divided
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 tablespoons flour
  • 1 cup vegetable or chicken broth
  • 1 cup heavy cream
  • 2 cups fried onions, divided
  • 1/4 cup panko bread crumbs
  • 1/4 cup parmesan cheese, finely grated

Instructions

  1. Preheat Oven: Preheat the oven to 375°F. Grease a 9 x 13-inch baking dish to prepare for the casserole.
  2. Blanch Green Beans: Bring a large pot of salted water to a boil. Add the green beans and blanch for 3 to 4 minutes until tender-crisp. Drain and immediately transfer to ice water to stop cooking. Drain again and pat dry on a towel.
  3. Sauté Mushrooms: In a large skillet, melt 2 tablespoons of butter over medium heat. Add mushrooms, kosher salt, and pepper. Cook for about 5 minutes, stirring occasionally, until mushrooms release their moisture and soften. Add minced garlic and cook for 2 more minutes until fragrant.
  4. Make Sauce: Sprinkle flour over the mushrooms and stir to combine. Gradually add the vegetable or chicken broth, simmer for 2 to 3 minutes until slightly thickened. Reduce heat to medium-low, add heavy cream, and stir occasionally. Cook for 5 to 10 minutes until sauce thickens to desired consistency.
  5. Combine Beans and Sauce: Remove skillet from heat. Stir in the blanched green beans and 1 cup of fried onions until well incorporated. Pour this mixture into the prepared baking dish.
  6. Toast Breadcrumbs: In a medium skillet, melt the remaining 1 tablespoon of butter over medium heat. Add panko breadcrumbs and toast for 3 to 4 minutes, stirring frequently, until golden brown. Season with salt and pepper to taste.
  7. Add Toppings and Bake: Sprinkle the remaining fried onions, toasted breadcrumbs, and grated parmesan cheese evenly over the casserole. Bake uncovered in the preheated oven for 20 minutes, or until bubbly and golden on top.
  8. Serve: Remove from oven and let cool slightly. Serve warm and enjoy this rich and crispy green bean casserole.
