This creamy garlic parmesan mushrooms recipe is a quick and delicious vegetarian side dish featuring tender mushrooms cooked in a rich, flavorful garlic and parmesan sauce. Ready in just 20 minutes, it’s perfect for weeknights or as a savory addition to any meal.

Ingredients

Butter and Seasonings

  • 2 Tbsp unsalted butter (28 g)
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp ground black pepper
  • ½ tsp smoked paprika

Mushrooms and Liquids

  • 16 oz button or baby bella mushrooms, cleaned
  • 1 cup vegetable broth (236 mL)

Cheese

  • 4 oz cream cheese, cut into cubes (113 g)
  • ½ cup shredded parmesan cheese (40 g)

Instructions

  1. Flavor Base: In a large sauté pan or medium pot, melt 2 Tbsp unsalted butter over medium heat. Add minced garlic, Italian seasoning, ground black pepper, and smoked paprika. Cook until the garlic becomes soft and fragrant, about 1 to 2 minutes.
  2. Simmer Mushrooms: Increase heat to medium-high. Stir in the mushrooms and vegetable broth. Cover and cook until the mushrooms release their moisture and become soft, about 10 to 15 minutes.
  3. Remove Mushrooms: Using a slotted spoon, remove the mushrooms from the pan and set aside in a bowl, leaving the cooking liquid in the pan.
  4. Melt Cream Cheese: Stir the cream cheese cubes into the simmering liquid. Continue to simmer uncovered, stirring often, until the cream cheese melts and the sauce thickens, approximately 2 to 3 minutes. Adjust consistency with hot water if needed.
  5. Add Mushrooms and Parmesan: Return the mushrooms to the pan and stir in the shredded parmesan cheese until melted. Serve the creamy garlic parmesan mushrooms warm.

Notes

  • Use fresh mushrooms for best flavor and texture.
  • Adjust seasoning to taste, especially salt since parmesan cheese is salty.
  • If sauce is too thick, add a tablespoon of hot water to loosen it up.
  • Can be served as a side dish, over pasta, toast, or alongside proteins.
  • Leftovers store well in an airtight container in the refrigerator for up to 3 days.
