  • 1 can full-fat coconut milk (13 1/2 ounces)
  • 1/2 cup water
  • 1 teaspoon vanilla bean paste
  • 3/4 teaspoon ground cinnamon
  • 2 tablespoons honey (plus more to taste)

Instructions

  1. Rinse Quinoa: Rinse the quinoa well in a fine-mesh strainer under cool running water for 30-60 seconds to remove its natural bitter coating.
  2. Combine Ingredients: In a medium saucepan, combine the rinsed quinoa, full-fat coconut milk, water, vanilla bean paste, and ground cinnamon. Stir the mixture well.
  3. Bring to a Boil: Place the saucepan over medium-high heat and bring the mixture to a gentle boil while stirring frequently to prevent sticking.
  4. Simmer: Once boiling, reduce the heat to low. Partially cover the pan with a lid and simmer the porridge, stirring occasionally, until the quinoa is tender and most of the liquid is absorbed. This should take about 15 to 20 minutes. The texture will be thick and creamy, similar to loose oatmeal.
  5. Sweeten: Remove the porridge from heat and stir in 2 tablespoons of honey. Taste and add more honey if desired. For a thinner, more pourable consistency, stir in a splash or two of water.
  6. Serve: Divide the porridge into bowls. Top with fresh berries or chopped fruit if desired. Serve warm for a comforting breakfast.
