Ingredients

Shrimp

  • 1 lb shrimp (peeled and deveined)

Cooking

  • 2 tsp coconut oil
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1 lime (zest and juice)
  • 1/2 can full-fat coconut milk (approximately 7 oz)
  • 2 tbsp soy sauce

Garnish

  • 1/4 cup fresh cilantro (chopped)
  • 2 scallions (chopped)

Instructions

  1. Heat oil and cook shrimp: Heat two teaspoons of coconut oil in a large skillet over medium heat. Add the peeled and deveined shrimp and cook for one minute on one side to begin cooking.
  2. Add aromatics: Flip the shrimp to the other side and immediately add the minced garlic and grated fresh ginger. Toss the shrimp in the garlic and ginger to coat evenly and cook for an additional one minute to build flavor.
  3. Simmer with coconut milk and lime: Pour in half a can of full-fat coconut milk, the zest and juice of one lime, and two tablespoons of soy sauce. Bring the mixture to a simmer and cook until the shrimp turn pink and are fully cooked through, approximately 2–3 minutes.
  4. Finish with fresh herbs: Remove the pan from the heat and stir in the chopped scallions and fresh cilantro for a bright, fresh finish before serving.
