Ingredients

Pasta

  • 8 oz angel hair dry pasta

Sauce

  • 3 tbsp salted butter
  • 3 garlic cloves, minced
  • 1/4 tsp Italian herb seasoning
  • 1/2 tsp chicken Better Than Bouillon
  • 1 cup heavy cream
  • 1/2 cup Parmigiano Reggiano, freshly grated
  • 3/4 cup milk
  • 1/2 tsp salt
  • Pinch of pepper

Optional

  • Chopped parsley for garnish

Instructions

  1. Boil Pasta Water: Bring a large pot of water to a boil and add a few pinches of salt to season the water.
  2. Cook Garlic and Herbs: In a medium saucepan, melt the butter over low heat. Add the minced garlic and Italian herb seasoning, cooking for 2-3 minutes until fragrant.
  3. Add Cream and Seasonings: Stir in the heavy cream, chicken Better Than Bouillon, salt, and pepper. Increase heat to medium and stir until steam begins to form.
  4. Incorporate Cheese and Thicken Sauce: Add the freshly grated Parmigiano Reggiano and stir continuously until the sauce thickens. Reduce heat to medium-low and continue stirring for an additional 5 minutes until the sauce thickens further.
  5. Cook Pasta: Add angel hair pasta to the boiling water and cook until al dente, following package instructions carefully. Before draining, reserve 1/4 cup of starchy pasta water.
  6. Add Milk to Sauce: Gradually add milk to the sauce in 1/4 cup increments over low heat, stirring constantly to thin the sauce to the desired consistency.
  7. Combine Pasta and Sauce: Drain the pasta and immediately toss it into the sauce, coating the noodles evenly.

Notes

  • Timing: Coordinate cooking so the pasta finishes cooking just as you complete the sauce preparation.
  • Pasta Water: Use reserved starchy pasta water to adjust sauce thickness if needed.
  • Cheese: For best flavor and texture, always use freshly grated Parmigiano Reggiano cheese.
