Ingredients

Sauce

  • 2 Tbsp. unsalted butter
  • 2 garlic cloves, minced
  • 1 (8 oz.) pkg. cream cheese, cubed
  • 1 1/4 cups milk, plus more to taste
  • 1/2 cup grated Parmesan cheese, preferably freshly grated
  • 1 Tbsp. finely chopped parsley
  • Kosher salt and fresh black pepper, to taste

Pasta

  • 16 oz. pasta of choice, cooked according to package instructions

Instructions

  1. Melt Butter and Cook Garlic: In a large skillet, melt butter over medium heat. Add minced garlic and cook just until fragrant, about 30 seconds, stirring constantly to prevent the garlic from browning.
  2. Add Cream Cheese and Milk: Add cubed cream cheese and 1 1/4 cups of milk to the skillet. Let the cream cheese soften further, then whisk the mixture continuously until the sauce becomes creamy, starting off clumpy and smoothing out gradually. Keep the heat at medium and avoid bringing the sauce to a rapid boil.
  3. Incorporate Parmesan and Season: Whisk in the grated Parmesan cheese until fully combined. Taste and season the sauce with kosher salt and fresh black pepper as needed. Stir in the finely chopped parsley to add freshness.
  4. Toss with Pasta: Since the sauce will be thick and creamy, immediately toss it with the cooked pasta of your choice. If the sauce is too thick, thin it with additional milk or reserved pasta cooking water until desired consistency is reached.
