Ingredients

Salmon Fillets

  • 4 salmon fillets, each weighing about 5 to 6 ounces
  • Salt and fresh ground black pepper, to taste

Crab Stuffing

  • 8 ounces crab meat, drained well and finely chopped
  • 4 ounces cream cheese, softened
  • ¼ cup diced bell peppers (red, green, or yellow)
  • 4 cloves garlic, minced
  • 1 whole egg, lightly beaten
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon Old Bay seasoning
  • 2 tablespoons panko bread crumbs
  • Cooking spray for topping
  • Chopped fresh parsley, for garnish

Instructions

  1. Prep the Oven and Pan. Preheat your oven to 425˚F and line a baking sheet with parchment paper to prevent sticking and allow easy cleanup.
  2. Prepare the Salmon. Place the salmon fillets on the parchment paper and season them with salt and fresh ground black pepper. Carefully cut a ¼-inch-deep pocket in the center of each fillet without slicing all the way through, creating space for the stuffing.
  3. Make the Crab Stuffing. In a mixing bowl, combine the finely chopped crab meat, softened cream cheese, diced bell peppers, minced garlic, lightly beaten egg, chopped fresh parsley, and Old Bay seasoning. Stir well until all ingredients are thoroughly mixed.
  4. Stuff the Salmon. Spoon the crab mixture evenly into the pockets of each salmon fillet, ensuring the filling is well packed. Then sprinkle panko breadcrumbs evenly on top of each stuffed fillet. Lightly spray each fillet with cooking spray to promote browning and crispness.
  5. Bake the Salmon. Transfer the baking sheet with the stuffed salmon fillets to the preheated oven. Bake for 18 to 20 minutes, or until the salmon is thoroughly cooked and the internal temperature reaches 130˚F, ensuring a moist and tender center.
  6. Garnish and Serve. Remove the stuffed salmon from the oven, garnish with additional chopped fresh parsley for a burst of color and freshness, and serve immediately for the best flavor and texture.

Notes

  • Ensure the crab meat is well drained to avoid soggy filling.
  • Use fresh salmon fillets for best taste and texture.
  • You can substitute Old Bay seasoning with your favorite seafood seasoning blend.
  • Check salmon internal temperature with a meat thermometer to avoid overcooking.
  • Serve with a side of steamed vegetables or a light salad to complete the meal.
